... my 'hainan' chicken rice...

yesterday my friend hemant was sharing some of his story about his study life in singapore...
one of those things that he misses so much was the singaporean food...
the chicken rice was one of his favourite...
and it is one of my favourite food too...

4 cups jasmine rice...
1 whole chicken...
5 tablespoon vegetable oil...
4 cloves chopped garlics...
4 finely chopped shallots...
1 small thumb of ginger...
1 teaspoon salt...

wash chicken and stuff ginger and scrub the salt all over the chicken...
boil the chicken in pot for 45 minutes...
when chicken is cooked, remove chicken and leave it into cold water for 10 minutes...
drain the chicken and keep the chicken soup for the rice...
chicken will be ready to chop and serve when the rice is cooked...

heat oil in wok and fry chopped garlic and shallot...
add jasmine rice and stir together with the chopped garlic and shallot...
transfer the rice into the rice cooker then mix with the chicken soup...
wait till it cooked and then serve wit the chopped chicken...
