... my red braised pork belly...


500 gram fresh and boneless pork belly with skin on...
1 piece unpeeled ginger...
8 button mushrooms...
1 unpeeled garlic...
parsley leafs...
3 tablespoons cooking oil...
1 tablespoon dark soy sauce...
1 tablespoon brandy or rice wine...
1 teaspoon salt...

blanching the pork belly in boiling water to remove some of its impurities...
remove the pork belly and rinse it with cold water then slice into bite-sized pieces...

heat up pot with cooking oil till high heat...
slide the pork belly into the pot and spread it out evenly...
brown over high heat for few minutes...
add all the remaining ingredients...
stir will to combine and bring it to boil...

once it's boiled, lower the flame until the pork is tender and the liquid has evaporated into a thick sauce...
